While lesson plans are important to provide structure to a lesson, they shouldn't be so rigid that they don't allow flexibility to the student's needs. A veteran teacher can be more flexible relying on experience to adapt to student needs. A teacher with less experience should write down more and anticipate any problems. A good lesson plan can also provide documentation of what has been covered and structure to make changes with what worked well and what didn't work. A good lesson plan will also help keep you on track and provide good pacing for a lesson. Keep it simple though so you can refer to it while you are teaching.
